Some More Small Successes

1. I have developed a daily schedule for our homeschool. I have no idea how it's going to work once we actually get going, but at least I have a place to start.

2. I have a rough monthly guide for our homeschool and have even started plotting out daily "lessons" for the first two weeks. (This is good because I've set our start date for a week from Monday!)

3. I have begun experimenting with a recipe for chocolate zucchini muffins. I wasn't satisfied with anything I found because they didn't taste very good or they were a little too much on the cupcake side of the muffin/cupcake line. This is the first time I've ever really come up with a recipe on my own (though I have four I read through and tried before branching out.) I've made two different batches and the second is much better than the first. I'd love to hear if anyone has recipes they like.

  1. Yay for the plotted daily "lessons." Having a plan is always a good thing, even if you don't end up sticking to it.

Please post your chocolate zucchini muffin recipe if they're good!

  3. I will definitely post the recipe when I'm done experimenting. I have a bunch of ideas to try and need to wait for more zucchini or summer squash to grow! (I'll have to be careful or we'll have no squash in the freezer, just batch after batch of chocolate muffins.)

  4. Hey, if you need more zucchini or squash, I've got loads! I found a recipe on allrecipes.com for Grilled Zucchini Boats that I want to try sometime.

I need to finish getting my lesson plans together. I still have to decide what day we're starting.
